Pumpkins are everywhere this Halloween season. They decorate our homes and porches and they fill our pies and cakes. A friend of mine recently shared this Pumpkin Cake recipe that's absolutely delish! Easy to make! Easy to eat!
Pumpkin Cake
4 eggs
2 cups of sugar
1 cup of vegetable oil
2 cups of flour
2 tsp. of baking soda
2 tsp. of cinnamon
1 tsp. of baking powder
1 tsp. of salt
1 small can of pumpkin
Mix ingredients together and pour into greased cake pan or jelly roll pan. (The jelly pans makes a lot more) Bake at 350 for 30 minutes. It'll likely take a bit longer if you use the cake pan.
Icing
1 stick of butter or margarine
1 tsp. of vanilla
1 8 oz. of cream cheese
1 lb. of powdered sugar
Mix together with a mixer until smooth.

Nancy...I actually made this for a family get together last weekend and OH MY GOSH was it good. I can't even imagine the calories I consumed, but it was well worth it. Thanks for the recipe - it is a keeper.
